Raw Persimmon Cheesecake with Pomegranate Coulis

I am really proud of this cheesecake – I think it might be the first raw persimmon cheesecake to hit the interwebs! I couldn’t find a recipe for raw persimmon cheesecake so I made my own based on Sweetly Raw’s Mandarin Orange Cheesecake on a Pecan Ginger Crust with a Cranberry Pomegranate Compote, and Candied Pecans. I give it a 4/5 Happy Monkeys.  The texture is spot on and it makes a nice, healthy treat.

More Pizza! Raw Pizza Margherita

This raw pizza margherita is an easy follow-on to my last pizza recipe (Raw “Pizza Supreme”).  I used the same crust and cheese and just added some fresh tomatoes, dill and basil.  What could be easier?  Also for this one, I didn’t dehydrate it because I wanted that fresh flavor.  Instead, I just took the crust and cheese out of the fridge a little early so they could warm up to room temperature.  This recipe get a 4/5 Happy Monkeys, only because it is simpler and is missing the complexity that the sausage brings to the Pizza Supreme.  Still very delicious though! Unfortunately, the buckwheat bothered my stomach, but this could easily be done with an almond-based crust, or even just some raw crackers.

Yum Yum! Raw “Pizza Supreme”

Raw Pizza Supreme

I love this recipe for Raw Pizza Supreme from naomipoe in the Raw Freedom Community forums!  It was my first time attempting any raw food with buckwheat and it was much easier than I expected.  After reading all the posts and links in this thread, I found out that you only have to soak the buckwheat for 30 minutes! No sprouting required!  Thus, buckwheat is actually easier, not to mention cheaper, than using nuts as a base.  The only unfortunate part is that my tummy didn’t react well to the buckwheat.  I am learning more and more that it is just not gluten that I react too, but most grains too.  Even though buckwheat isn’t officially a grain, it still set me off 😦 It’s too bad because I really liked both making and eating this crust.

This recipe would have gotten a 5/5 Happy Monkeys but I had to downgrade it since it upset my stomach.  It still gets a 4/5 Happy Monkeys because of how tasty it is but next time I will try it with a buckwheat-free almond-based crust.

Raw Blueberry Smoothie

I just had to post this blueberry smoothie recipe because it is freaking delicious.  My usual blueberry smoothie recipe is a banana, frozen blueberries, lots of soymilk, water and ice.  But I thought it would be good to try to cut down on the massive amount of soy I’m eating these days, so I tried a new smoothie recipe based on the one in Ani Phyo’s Ani’s Raw Food Kitchen Cookbook.  And I like this one even better than my usual smoothie.  I threw the strawberries in at the last minute because they were just hanging around in the fridge, but I think they totally made this smoothie.  Before I put them in, it was a bit too sweet from the dates.

Ani’s Raw Garden Scramble

I was listening to Ani Phyo on Raw Mom, Cooked Dad today (which has been awesome, by the way) and was inspired to pull out her Ani’s Raw Food Kitchen Cookbook and make her garden scramble.  It’s a recipe I’ve only made once before last year but I made the full recipe and was really sick of it by the time I finished multiple meals of it.  This time, I only made a half recipe, which still makes a lot.  I ate two bowls and still have just as much left over.  Maybe next time I’ll only make a quarter recipe.  It’s good but it has a strong tumeric, almost mustardy taste, so a little goes a long way. I give this 3/5 happy monkeys.

Raw Pumpkin Pie With Vanilla Cream – OMG!

Another recipe culled from EachPeachPearPlum’s Thanksgiving 101 thread.  Oh my god, is this good.  Wow, wow, wow.  This was the highlight of our Thanksgiving dinner.  All my cooked friends loved it and you’d never know it was raw. It also freezes well so you can enjoy it later.  No question 5/5 happy monkeys.  This freakishly delicious recipe was also submitted to The Nourishing Gourmet’s awesome Pennywise Platter Thursday.

Virgin Pina Colada

Boy, how old is this post!  Time to get it off the draft shelf:

Just got our new Vita Mix in the mail!  We were super excited so we made a yummy homemade pina colada to celebrate.  We got a fresh young coconut and pineapple from whole foods – the guy who worked there was so nice, he helped us pick out good ones and even cut the pineapple in half for us.  I give this a 3.5/5 happy monkeys because I looove pina coladas, but I still want to perfect the recipe.

Ingredients:

– fresh pineapple
– fresh young coconut
– fresh young coconut water
– shredded dried coconut,
– bit of orange juice
– ice

Directions:

Throw in Vita Mix and blend away. Enjoy!

Next time: I would use water instead of oj because oj has too strong of a sweet, oj taste.  Also, wouldn’t use the shredded coconut because it made it kind of gritty.  Also I want to experiment with regular fresh coconut, instead of the young ones to see if that gives it a different flavor.
